NAPPA VALLEY
Look at those fields, amazing! I never knew a world like that even existed. Wine making is a science. Cooking is art in motion and it can be smelled, looked at, tasted, heard and touched...are you hungry yet? LOL
Wow what a year so far! I just returned from a trip to the Nappa Valley in California where I was representing the best in Air Force for food service! We were sponsored by leaders in the reaturant industry through the National Restaurant Association (HTA initiative) to attend a week long course in the Culinary Institute of America at Greystone!
What an event! We visited the local wine establishments and vinyards. I am not a very big fan of wine but I learned the basics to grade, taste and pair wines with food. The bottom line- drink what YOU enjoy!
The instruction was a full 12 hour day with 2 hours of travel time- one to get there and another to get back to our rooms! We stayed busy! Class time with Chefs in the schoolhouse were followed by preparing dishes for the whole class to taste. We made Mediterrenian, American (north and south), Greek, Italian and Asian. It rocked! My favorite dish, which I helped prep, was a Pescado Veracruzano.

It is grilled halibut fillets served with a very tasty and mildly spicy salsita.
I was also humbled to meet industry leaders like the co-ceo for Panda Express, Ms. Cherng and other industry leaders.
AZORES
More great news! After six and a half years at Kirtland AFB, NM. I finally received orders! Yes, I am finally going to see the world! I will be leaving for the Azores Islands of Portugal in May! Angel (my son) and I are EXTREMELY excited! One of my many goals in life is to some day go deep water fishing! That will be happening very very soon! I love my life, career and everything that I have been blessed with! One of our Lt's just left our beloved AF and he stated, "Everything I have and everything I have been given- including my personality, has been a blessing from God and hopefully it has been used to inspire you and make you smile in some way, for HIS glory!" ditto to that Lt Benji Marquez! Life is good!
